Dot Dot Dot opened in 2016 under the genius of Master Mixologist Stefan Huebner. Under the main idea to bring true classic cocktails to Charlotte, North Caraolina, along with providing exceptional hospitality and delicious food, to create an experience to remember. Our small venue gives a speakeasy lounge vibe.

Stefan Huebner

Award-winning and a 25 year veteran of the Hospitality Industry, Stefan Huebner has almost done it all. Using all the skills he learned throughout his career — he was a butcher, a baker (never a candlestick maker), a culinary degree holder, and even a keyboard player for an alt-rock band — he built a strong foundation to discern how multiple ingredients could be blended together for new flavor experiences. It’s this foundation that drives his passion for providing Dot Dot Dot Members with unique and totally satisfying experiences.

Stefan’s passion for mixology, however, wasn’t always there. It wasn’t until the mid-90s when he was bartending for extra money that he discovered his true calling as a mixologist. Soon after the discovery, Stefan was winning Mixology Contests and traveling the world making drinks.

Conrad Hunter

Conrad, an 8th generation Charlottean, is obsessed with single malt scotch … and all things distilled. He’s read and learned everything he could on the subject and, more importantly, has tasted as many single malts as he could get his hands on. Somewhere along the way on his obsessive journey, a seed was planted to open a top-notch whisky bar. After several years of talking with business partner Stefan, the two opened Dot Dot Dot. The rest is history.

Conrad James Hunter is also the owner of award-winning Foxcroft Wine Co. Before owning both Dot Dot Dot and Foxcroft Wine Co., Conrad wore many hats. He was a professional musician touring 48 states during the ‘80s, a recording engineer and producer in the ‘90s, and even a wholesale rep in the wine industry. Creativity and passion are the driving factors in his life, which led to him open both Dot Dot Dot and Foxcroft Wine Co.

Nori Schmidt

Nori T. Schmidt was born into the Food and Beverage business. Growing up in the breakfast and lunch diner her parents owned when she was a child nurtured her love for entrepreneurialism and service industry.

Born and raised in South Florida, she got her first serving job at sixteen, and it has been an uphill climb from there. At eighteen she first began bartending and quickly became lead bartender and assistant hotel manager to the Walkabout Beach Resort in Hollywood, FL. From there, she moved to New York City to perform in the New York Fringe Festival and got a job working for hotelier Sean MacPherson in his café and restaurant Margaux at The Marlton. It was here where she first began her mixology and craft cocktail craft.

After leaving New York in 2014, Nori and her husband moved to Long Beach, California, where she was the opening team of Mezcalero DTLB, later becoming the Bar Manager of that property.

Through an old friend and acquaintance, in 2018, Nori was plucked from California to curate and run the cocktail program at Young’s Wine Rooms in Melbourne, Australia, in the historical Young’s Auction House location, with a focus on great food, wine, classic cocktails and coffee. After getting the program on its feet, she returned to California as bar supervisor of the Spanish-goth-inspired Mi Vida Loca bar and lounge.

Moving to Charlotte in 2020 to help open Fine & Fettle and the Canopy by Hilton in Southpark, she has joined the team at Dot Dot Dot as General Manager to expand her knowledge and love of service, craft cocktails and great food.

Matt Deering

Chef de Cuisine Matt Deering was born and raised in Charlotte, coming from a family of handymen and women. His parents were incredible examples of how hard work, and the experience of real-world skills and scenarios could bring great success, and he applies all he’s learned to his cooking.

He was never passed down recipes from his family, often being the head chef in his own home, so he has always been a blank slate, open to new styles of cuisine and culture.

At a young age, food always sparked an interest and passion in him. Any time he tried something amazing, he looked for new ways to recreate it, and the more he tried, the more he honed his skills and palate, which eventually led him to pursue a career as a chef.

He began at a pizza place in Huntersville as a busboy and after a month of diligently completing any task assigned to him, he asked the chef for a chance in the kitchen. Two years later he moved far from the city to Boone, where he learned the priceless skill of utilizing local and seasonal ingredients. Three years later Matt relocated back to Charlotte and landed a position at Peppervine. Knowing how successful their sister restaurant Artisanal was, he was eager for the chance to work with some of the best chefs in Charlotte.

But still, he grew restless. He wanted the opportunity to run his own show, using his hard work and skills to curate his own unique menu, which led him to Dot Dot Dot. His hope was to match the incredible cocktail menu and believed his palate could bring a comparable game to their food menu. And he has. Matt is excited about the future and the amazing dishes to come.
